Rice paper rolls with prawns and hoisin peanut dipping sauce

So want to make something easy and quick? Here is one!

This dish is really simple, easy & fresh. And affordable to make too given that it involves seafood, i.e. prawns.

Another reason you should make this is that the dipping sauce is so amazingly good. It is a must keep recipe.

Ingredients:
Serve for one rice paper roll. So multiply the ingredients to the number of rolls you want to make.

Prawns:

3 prawns, quickly blanched it in boiling water ~1-2 mins.

Hoisin Peanut Dipping Sauce:

1/2 cup hoisin sauce (I use Lee Kum Kee brand)
1/8 cup smooth peanut butter
1/2 tablespoon rice vinegar
1 garlic
1 bird’s eye chili, minced

In a blender, combine all ingredients. Blend until everything combines smoothly together. If it is too thick, add a little bit of warm water until desired consistency.

To assemble:

1 rice paper wrapper
2 leaves of lettuce (I use Frisee or or green oak)
few thinly sliced cucumber
few thinly sliced carrots
Some fresh herbs: mint, coriander, basil (if you desire)

In a bowl of warm water, dip rice paper wrapper for about 3-5 seconds. Do not over sock the wrapper.
Place on a cloth, this will be easier during folding.
On top 1/3 side closest to you, lay lettuce on the bottom for added strength to the wrapper. Then place prawns, vegetables and herbs.
Roll it up about 1/3 way through, then fold in the sides.
Serve with hoisin peanut dipping sauce.

Notes:

When rolling the rice paper, be very gentle so that you don’t break the wrapper or stick them together. Just have a few practice and I am sure that the third one you make will be perfect.
