Last Sunday, I had the pleasure of the company of a few friends for lunch over at my place. It was such a gloomy day – cloudy and cold! This mean autumn is here – well it was Autumn season since the start of March but it has been a very HOT Summer here in Australia so we did not really feel the arrival of Autumn until last week. I woke up feeling restless and lazy due to the weather but it was soon brightened up by the company of friends 🙂

I made Hainanese chicken rice for lunch (for recipe and cooking instructions, Click Here). This is a much-loved Chinese classic and one of my favourite dishes. I made this a number of times and always enjoyed by my friends. I usually eat this dish with bokchoy, lightly blanched and sliced cucumber and tomatoes with homemade chili sauce and sweet soy sauce (as in the photo above). Thanks to Herli for the help with bokchoy, cucumber and tomatoes too! OH and chopping the chicken!
I had such a great time – so much fun and laughter. Soon, the dark and cloudy sky was brightly coloured by the fellowship we had.
If you are reading this and having a bad day maybe due to bad weather or stress, I hope that you have some close friends to accompany you through this.
